Wild Rice Pilaf with Fruit

I tried a new recipe for dinner tonight that everyone seemed to like.  It was very flavorful!

  • 1 small onion, chopped
  • 1 celery rib, chopped
  • 1 small carrot, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon butter
  • ¾ cup uncooked brown rice
  •  cup uncooked wild rice
  • 1 can (14-1/2 ounces) reduced-sodium beef broth or vegetable broth
  • 1-¼ cups water
  • ¾ cup dried apricots, raisins and dried cranberries
  • 1 tablespoon minced fresh parsley
  • ¼ teaspoon salt
  •  teaspoon dried thyme
  •  teaspoon rubbed sage
  •  teaspoon pepper
  • ¼ cup chopped pecans, toasted

In a large saucepan, saute the onion, celery, carrot and garlic in butter until tender. Add brown rice and wild rice; stir to coat. 
Stir in the broth, water, fruit, parsley, salt, thyme, sage and pepper. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until liquid is absorbed and rice is tender. 
Remove from the heat; stir in pecans. Cover and let stand for 5 minutes. Fluff with a fork before serving. Yield: 5 servings.

My notes:  The original recipe actually called for golden raisins and cherries instead of dried apricots, raisins and dried cranberries. I just used what I already had in the house.  For the rice, I found a bag of brown rice and wild rice mix that was more economical than buying the two types of rice separately.  And for the broth, I made my own chicken broth using organic chicken base.  

Fuzzi Bunz

I captured this picture of Savannah last week because it reminded us of a library book.  Right now we have a booked checked out called “Books are for Eating.”  In the book the big sister says, “I know books are for reading, but Alex (her baby brother) thinks that books are for eating!”  The book continues with many scenarios.  One that always makes the girls laugh is when the baby brother thinks the clean diapers are for rolling in!  Apparently Savannah thinks the same.  She stood at the coffee table where they were nicely organized, tossed them on the floor and then rolled in them.  

Speaking of cloth diapers, I’m very excited that Fuzzi Bunz now makes a one-size pocket diaper!  We’ve been using Fuzzi Bunz for almost a year and love them!  However, one draw back in recommending them to other people was that they had different sizes.  (You would buy a set of smalls for your newborn and then a number of months later turn around a buy a set of mediums.)  I doubt we’ll invest in any more diapers at this point (we have a good supply), but now I will be even more likely to recommend the Fuzzi Bunz brand to my friends.  

If Savannah looks a little less than happy in this picture, it’s probably because she had a rough week last week.  On Sunday she started a fever which ranged between 102 and 104 and lasted for three full days.  We took her to the doctor and the PA diagnosed her with an ear infection.  Within a half hour of arriving home from the doctor’s office, she started throwing up and had 36 hours of vomiting and diarrhea.  She also broke out in a familiar rash, and I’m now pretty sure she also had roseola!  (I remember the rash from when Kayla and Madeline had it.)  Roseola, an ear infection and a stomach virus all in one week—poor thing.  And without further adieu, here is Savannah rolling!

Being a Kid Again

When the new year comes, I usually like to set some sort of goal or two—though I prefer not to call them resolutions.  This year one of my goals was to spend more time playing with my kids!  With all the time that goes into feeding them, teaching them and caring for their basic needs, sometimes it’s hard to put all distractions aside and just play!  So last Monday, before the brutal cold weather came, Kayla, Madeline and I spent the afternoon goofing around outdoors.  The highlights (in my opinion) were playing tag and making snow angels.  Here are a couple pics:

The Imagination of a Two-Year-Old

I’m not big on letting my kids watch movies.  When we go on car trips, however, we never leave home without Dora movies.  Aaron drives and listens to a book on his iPod, I read, and Kayla and Madeline watch endless episodes of Dora the Explorer.  (Savannah chills out, rarely sleeps and occasionally vocalizes her discontentment!)  

This morning, Madeline (who is always pretending to be someone else) was Dora.  I’m not sure how much of this is from her own head and how much is from actual Dora episodes, but I sure thought it was cute nonetheless!

Madeline:  I’m Dora.

Mommy:  Oh, hi, Dora.  What are you going to do today?  Are you going to go on an adventure?

Madeline:  Yeah.

Mommy:  Are you going to help somebody?

Madeline:  Yeah.  Boots.

Mommy:  Oh, did Boots lose something?

Madeline:  His boots!

Mommy:  Oh boy!  Boots lost his boots.  Where will you go to find them?

Madeline:  To the nut forest!  Boots and I will go there, and Tico will take us there in his car.  And then the nuts will follow us there, and they’ll go back up in the trees.

Mommy:  Wow!  The nuts will go back up in the trees?

Madeline:  Yeah, and then we’ll go to Crocodile Lake.  Benny will help Boots when he falls out of the boat.  Yeah, he falls out of the boat when he’s getting Dora’s backpack.

Mommy:  Oh did Backpack fall in Crocodile Lake?

Madeline:  Yeah.  And then I’ll go play with the Fiesta Trio!  And I’ll sing a song with them.  I’ll sing “My God is So Big!”
